Abstract:

The present invention is to produce a reduced calorie Indian Traditional Sweets namely Mysore Pak, Carrot Halwa, Beetroot Halwa, Coconut Burfi and Rasagulla considering the diabetic population of India. Sucralose, a zero calorie intense sweetener was used for all the five products and different bulking agents like Mannitol, Fructo oligosaccharide (FOS), Maltitol, Polydextrose, Isomalt and Sorbitol were used in the formulations for all the five products. Sensory analyses were conducted for five sugar- free sweets and scores were obtained from diabetic and non diabetic people. The invention works on the judicious combinations of sucralose and bulking agents which completely replaced sugar for both taste and functional property. The invention aided in the calorie control and glycemic control which is an essential requirement of diabetic people.

The glycemic index (GI) of the different polyols was taken into account and low GI polyols (up to 55 GI) were selected to make sugar - free traditional products. The main advantage of the present invention is that the Glycemic control is essential for controlling diabetes to reduce the risk of heart disease and other associated risks and is also a key to weight control. The low Glycemic index foods have various benefits like reduction in blood cholesterol levels, prolonged physical endurance and also help reduce hunger and keep the person fuller for longer. In the present invention the proximate analysis, sensory analysis and shelf life testing was conducted for all the five products with their sugar counterparts.
